my thoughts, some cards that are OP (over powered)
Anakin Skywalker (Q) way to good for 6 build maybe at 7 obuild, shuilds and parry ? that is just a little to much for me maybe Parry 1 or only 1+ power, or one less power or health
General Grievous (E) see below
cards that MIGHT end up being restricted
General Grievous (E) way to powerful with 4 things on him he will have about 14+ power and can attack 4 times ?? way OP
wicked awesome cards that are sweet and maybe a little OP
Commerce Guild Droid Line with 4 of these your droids will have 8+ heath SWEET
General Grievous (F) not being able to prevent damage NICE
Ilum Temple Nice just nice
Aayla Secura (C) way good abilities for 5 build
Geonosian Starfighter Swarm I just like it =D
Kenobi's Clone Army (A) Jedi subtype SWEET
Separatist Starfighter Squadron dang sweet ability
Republic Command Gunship sweet abilities
Ki-Adi-Mundi (C)

I hate to be mean, but there are some inaccuracies with your evaluation of some of the RaW cards.
Starfighters have low health. Anakin won't be around for too long. Plus conflict with the venerable Darth Vader, this card is appropriately priced. At 7 and 8 build, this card is unplayable. Besides, I'd still use an R2 and Nien Nunb any day.
Equipping a unit is very expensive, and Greivous can only have 4, 2 per turn, and so forth. Plus, it's an activated ability, so it can be disrupted. It's a powerful card combo, but expensive.
Abilities that are not triggered by a certain event (i.e. attack) can only be used once per turn, so there's no danger there.
Wizards set a precedent about Yoda cards being in Yoda speak. The wording on that card is correct.
Commerce Guild Droid line grants health 1, only to commerce guild units, and all for 28 build. It's expensive to pull of and illogical.
Ayala Secura (C) is based on Dark Woman, and her abilities correlate properly.
So, there are some powerful cards here, but you blew them out of proportion. None of these cards are by any means broken.

Whatever, it's just your tastes. There's a good amount of people who'll agree with both stances.
Eagle's Nest
First, the IDC has reluctantly adopted my Pilot philosophy for a set. That is that the abilities granted by the pilot should be equal to the cost of the character and the stats of that character. So while you say Anakin should only have granted Parry 1 and Shields 1 for the 6 build you pay, Parry 1 and Shields 1 actually cost much less than 6 build. If attached directly to a unit, they would cost exactly 2 build. So what return are you getting for the other 4 build? Nothing. You're just not used to piloting ability having that sort of build to benefit ratio, but in every combo that I've tested the IDC pilots, they came out as good enough playable units and not overpowered. Give them a chance.
Also, regarding Ki-Adi-Mundi, you said his ability should have text saying it can only be played once per turn. As Eagle's Nest pointed out, seeing as activated abilities can only be played once per turn anyway (accept for prevention and reroll activated abilities), it is meaningless to put that text. You don't get to play that ability multiple times a turn. You only get to play it once.
Though it would be costly to pull off multiples of Commerce Guild Droid Line.
